Ham and Potato Casserole

4 cups diced, cooked potatoes
1 small onion, diced
2 cups ham, diced
3 TBS butter
3 TBS flour
1 1/2 cups milk
1 cup shredded cheddar cheese
1/2 tsp paprika
Salt and pepper to taste

Combine potatoes, onion, and ham in a 2 quart casserole dish.
In a saucepan over medium heat, melt butter, blend in flour until smooth and bubbly.
Gradually add milk, cook, stirring constantly, until thickened.
Stir in shredded cheese and paprika - season with salt and pepper.
Pour over ham mixture and gently mix to combine.
bake at 350 for 35 - 45 minutes, until bubbly.
Serves 4 - 6
