1 &1/2 cups dry elbow macaroni noodles, cooked and drained
1 lb. ground beef or turkey
1 small onion, diced
1 (15-oz) can tomato sauce
1 tsp salt
1/4 tsp pepper
1 tsp salt
1/4 tsp pepper
1/2 cup cottage cheese (optional; add extra sour cream if omitting)
1 3-oz. pkg. cream cheese
1/4 to 1/2 cup sour cream (depending on if adding cottage cheese or not)
1 medium tomato, sliced
Heat oven to 350.
In a large skillet, cook and stir meat and onion, until meat is browned and onion is tender.
Drain any fat.
Stir in tomato sauce, salt & pepper.
Heat to boiling and simmer 1 minute.
Remove from heat and stir in cottage cheese, cream cheese, and sour cream until well blended.
Pour into ungreased 1 1/2 quart casserole dish.
Add cooked, drained noodles
Add cooked, drained noodles
Arrange sliced tomatoes on top.
Cover and bake 30 minutes or until bubbly.
4-6 servings.
